Teacher Week: Make Ahead Meals

One of my favorite topics…FOOD!

I try…really hard…to be as healthy as possible but I’m not always spot on. I’ve done 2 rounds of Whole30 and we try to eat Paleo. It doesn’t always happen but eating healthier definitely makes me feel better throughout the week.

One of my favorite meals to make (especially in the winter) is this Chicken, Sweet Potato and Kale Stew. You can find the recipe for it here.

I love this because it makes a TON. I can bring it for lunch and then freeze some and save for dinner if my hubby is out of town or has to work late. It is so easy and anything I can throw in the slow cooker..I’m a fan of!

I am a pretty lucky girl because my husband is the chef around here. He loves to cook and I help as much as possible, but he says it’s his time to “decompress” so I don’t argue 🙂 One of my favorite things he makes is this chicken dish. It is chicken, tomato, spinach, feta, olives. It seems to be pretty easy…or so I’ve heard.

I also make a batch of protein balls every other week and store them in the refrigerator.

This picture shows flaxseed, but I don’t put flaxseed in them anymore. I just do 1 cup of almond butter, 1 cup of honey, 3 cups of ground oats and a half cup each of chocolate chips and raisins. Then you roll them up and you can pop them for a healthy snack.

I have a lot more of good go-to meals and the easiest way for me not to post every single one of them here is to just follow my Pinterest board.
